Lapis Legit Spiced Truffles

Lapis legit, which is Indonesian for ‘sweet layer cake’, was developed in the colonial Dutch East Indies and contains a mix of Indonesian spices like cardamom, cinnamon and clove—you might have even heard of it by its other name, spekkoek. Making this cake requires patience and is a very labour-intensive process, hence its nickname: the ‘thousand layers cake’ (despite usually containing only around 18-20 layers). Fortunately, we didn’t have to go that far!

Inspired by the cake’s ultra rich and buttery flavour, we’ve taken everything that makes lapis legit such an irresistible treat and infused it into this month’s truffle filling. Encased in our Virunga 75% dark chocolate shells, we’ve created a ‘custard’ that carries the spiced, warming flavours of the cake but in a smooth filling and feels like the confectionary equivalent of a big hug. The filling melts into the deep chocolate Virunga shell so beautifully that you may have a hard time not reaching for another… and another!
